Taco Soup
"On Tuesday's, we eat tacos." That's something I tell myself every week. However, on one dreary Tuesday, I wanted something more comforting than tacos. I thought about whipping up some potato soup, but I also wanted to celebrate Taco Tuesday.
When in doubt, Pinterest it out. With a quick "taco recipes" search, I came across a Taco Soup recipe from The Diary of a Real Housewife (TDOARH). Just from her name, I know the recipe would be quick, easy and delicious.
After work, I went to the grocery store with my list in hand, then headed home to start the soup. TDOARH's recipe was four simple steps. Click here for the original recipe.
The only difference between my taco soup and TDOARH's is that I used ground turkey instead of ground beef. I buy Shady Brook Farms 99% fat free ground turkey. I seasoned the ground turkey with cumin, salt and pepper then cooked it on the stove top.
When it was time to cook the soup, I chicken broth instead of beef broth. I also skipped the ranch mix, to cut back on sodium, and used half the amount of taco seasoning since I seasoned the ground turkey. The end result was a flavorful, hearty soup with the perfect amount of spice. It tasted even better the next day for lunch.
Arielle Tip: If spiciness isn't your thing, use a mild salsa and less green chilies.
