Bojangles and Merchant & Trade Collaborate for a Bougie Brunch
There’s nothing like Bojangles for breakfast, but what if you could enjoy this beloved staple’s signature dishes while overlooking Uptown? Bojangles is collaborating with Merchant & Trade, the Kimpton Tryon Park’s 19th-floor rooftop bar and lounge, to present a unique culinary event called Bo’s Bougie Brunch.
Bo’s Bougie Brunch Event
Bo’s Bougie Brunch is a pop-up brunch event on Saturday, Feb. 8, from 1-5 p.m., at Merchant & Trade. The food menu celebrates the flavors that make the south – and North Carolina – so special, crafted by Kimpton Tryon Park Hotel’s Executive Chef Farid Ahmed, Merchant & Trade’s Chef de Cuisine James Jeffries and Bojangles’ Vice President of Menu and Culinary Innovation chef Marshall Scarborough. The culinary team worked closely to combine Bojangles’ signature menu items with local flavors, creating Southern comfort food with an upscale twist.
A $1 entry ticket is required for each guest, with proceeds donated to The Bojangles Foundation. In addition to all ticket sales, 10% of brunch sales from this event will also be donated to The Bojangles Foundation. This organization, a component of Foundation For The Carolinas, supports three civic-focused initiatives: literacy, military appreciation and strengthening the community. Since its inception, the Foundation has donated more than 22,400 books and $1.5 million to support important community causes.
One hundred tickets will be available starting Thursday, Jan. 30 at noon. Any remaining tickets will be sold at the door. Seating is on a first-come, first-served basis, and all guests must be 21 and over to experience Bo’s Bougie Brunch.
Bo’s Bougie Brunch Menu
The $1 ticket price gets you into the event. Once there, you’ll pay for each brunch item individually. Bo’s Bougie Brunch features a menu of elevated Southern fare, including the following dishes:
Billionaire’s Chicken Biscuit with gold leaf, Polanco caviar, Bo seasoned hollandaise, Bo biscuit and pickled green beans.
Bougie Bo Rounds with truffle crème fraiche, caviar, salmon roe, Texas Pete pearls and furikake.
Dirty Rice Arancini with sage Bo sausage and apricot mustard.
Bo, Bubbles and Bumps with Bojangles Fried Chicken, Polanco Siberian Reserve Caviar and Veuve Clicquot Yellow Label.
Big Bo Board with Carolina Twinkies – Bo Fry-seasoned chicken skins, Bo berry honey sauce, deviled eggs and Cheerwine bacon.
Cajun Peach Yakitori with Bo spiced kimchi and Bo honey peach pepper.

It’s Bo Time, a playful twist on a Floridian Rum Runner that features Queen Charlotte’s Rum infused with Bo Berry Biscuits, clarified with buttermilk to capture the smooth, buttery essence of Bojangles’ biscuits.
Uniquely Southern, a tribute to Cheerwine and the nostalgic charm of an ice cream float that reimagines the Louisiana Ramos Gin Fizz with a North Carolina soda fountain flair. Sutler’s Small Batch Gin is shaken with almond-cardamom syrup, heavy cream, cherry blossom water, egg white, fresh sour and finished with Cheerwine.
Gotta Wanna Needa Getta Hava is a North Carolina spin on the classic Kentucky Mint Julep with Bojangles’ Sweet Tea, North Carolina distilled Southern Star Double Rye Whiskey and Charlotte-made Regal Reedys Bitters. Fresh mint and watermelon round out this refreshing homage to the South.
Famous Fixins is inspired by the Texas highball classic Ranch Water and stars Volcan Tequila with Bojangles’ Peach Honey Pepper in a refreshing shrub base. A dehydrated Peach Honey Pepper leather garnish and Bo Fry Seasoning rim add a perfect balance of sweetness and spice to this effervescent creation.
