Dish of the Week: Mimosa Flight from Egg Bistro in Virginia Beach

When you wake up from a night of drinking, you have two options: 1. Hydrate and spend the day taking care of your body. 2. Put more alcohol in your system. Waking up Sunday morning, Memorial Day Weekend, I choose option two. Why not? I didn’t have work the next day and I was seeing Kendrick Lamar later that evening. To properly honor the rapper, I did exactly as his lyrics in “Swimming Pools” said. I woke up and drank.

Instead of my usual Dish of the Week post, I wanted to highlight the refreshing, hangover-relieving mimosas I had at Egg Bistro. Egg Bistro is a local chain with locations in Chesapeake, Suffolk and Virginia Beach. Before purchasing our tickets for the concert, my friend and I enjoyed a boozy brunch at the Virginia Beach location, which is just a few miles away from the Veterans United Home Loans Amphitheater.

I’ve had Egg Bistro on my brunch list for a while after seeing their mimosa flights on Instagram. For $10, you get four of their mimosa flavors to sip and sample. I ordered a traditional, Mango Tropics, Peach Pear, and strawberry.

When the flight arrived, the glasses were bigger than I anticipated. I certainly got my money’s worth. I slowly sipped the first mimosa—the traditional orange juice flavor—while eating the fluffy scrambled eggs in my breakfast bowl. The combination of bacon slices, home fries, eggs and champagne had me feeling better after a few minutes.

My other three flavors were under the 100% Crushed Fruit Puree Mimosas category. While the fruit flavors ran all the way through the drink, some puree did sit at the bottom. It wasn’t until my last mimosa that I realized stirring and drinking with a straw helps blend it all together. The puree certainly wasn’t thick enough to cause any straw blockage, which makes for smooth, easy drinking. All four mimosas were incredibly light. Since they use a crushed fruit puree, the drink doesn’t have a thick, syrupy taste like some flavored mimosas.

While I am a mango lover, the Peach Pear was definitely my favorite. Each bubbly sip brought a different refreshing taste of peach or pear. The combination was something I’d never seen offered on a mimosa menu.

I know it won’t be long before I return to explore more of the menu and imbibe even more of their brunch libations.
